The dish is provocatively named “Tofu Hell” due to the brutal nature of its preparation. The process begins with small eels being placed in a pot of cold water, where they swim freely. As the water gradually heats up, a piece of cold tofu is introduced into the pot. The sudden addition of tofu causes the eels to panic and frantically seek refuge within it. The result is a dramatic and distressing scene: the eels struggle to escape the rising heat, only to become trapped inside the tofu. As the water reaches boiling point, the eels are ultimately cooked alive.

This process creates what could be described as a three-layered hell for the eels. First, they are subjected to scalding hot water. Second, they become imprisoned within the tofu, which exacerbates their distress. Finally, they are boiled to death while still wriggling, making the preparation both visually and emotionally disturbing.

One diner who observed the preparation process commented on its cruelty: “This dish is truly inhumane. Just when the eels think they’ve escaped death, they find themselves in an even worse situation. Some diners even eat the dish while the eels are still wriggling inside the tofu.” This statement reflects the broader ethical concerns surrounding the dish.

The dish exemplifies how cultural practices can clash with modern sensibilities, leading to debates about the intersection of tradition and animal welfare.
